INGREDIENTS

4 chicken breasts, bone-in
4 tarragon sprigs
8 tangelo slices
Unsalted butter
2 tbsp., softened
Coarse salt
to taste
Pepper, freshly ground
to taste
DIRECTIONS
- Preheat the oven to 425° F/220° C/Gas Mark 7.
- Separate skin from each of the chicken breasts gently. Place 2 tangelo slices and 1 tarragon sprig under the skin of all breasts.
- Brush each chicken breast with ½ tbsp. butter and season them with salt and pepper.
- Roast the breasts until cooked through, or for 30 to 35 min.
