Bone-in skin-on chicken legs

Chicken thighs

Ground black pepper

Small onion
1/2, minced
Red bell pepper
1/2, chopped
Mushrooms
1 cup, sliced
Garlic
2 cloves, minced
Olives
1 tbsp, drained
Diced tomatoes
1 (14.5-oz) can
Chicken broth
1 cup
Fresh basil leaves
1 tbsp, chopped
DIRECTIONS
- Heat fat (2 tbsp) in a skillet over medium-high. Season chicken with salt and ground black pepper to taste. Add chicken to the skillet. Cook for 3 minutes on each side, or until golden. Remove the chicken from the skillet.
- Add the remaining fat. Add chopped onion and red bell pepper. Cook for 2 minutes.
- Add chopped mushrooms. Cook for 2 minutes. Add minced garlic cloves. Cook for 1 minute, or until fragrant. Add olives and tomatoes.
- Transfer the chicken back to the skillet. Add chicken broth. Over medium, bring to a simmer.
- Over low, simmer for half an hour, or until cooked through. Before serving, sprinkle with basil. Enjoy your easy Chicken Cacciatore!
