This 30-minute Chicken Stir Fry is so much better than takeout!
INGREDIENTS

Broccoli florets
7 oz, trimmed
Chicken breast, skinless, deboned, diced

Ginger
1 tbsp, minced
Garlic
2 cloves, minced
Red onion, thinly sliced
1
Roasted red pepper, cut into cubes
1
Extra virgin olive oil
2 tsps
Chili powder (mild)
1 tsp
Soy sauce
1 tbsp, reduced salt, if available
Honey
1 tbsp
Cooked brown rice
1 pack
DIRECTIONS
- In a medium pan, bring water to boil. Tip broccoli into boiling water and boil for 4 minutes. Drain, but reserve the water.
- In a non-stick wok, heat olive oil and stir-fry the ingredients for 2 minutes per batch in the given order: ginger, garlic, onions; chili powder; chicken; broccoli, soy sauce, honey, red pepper and 4 tbsps broccoli boiling water.
- Heat the rice according to the directions on the pack; serve with the chicken stir-fry.
