Chicken Stir-Fry with Broccoli and Rice

INGREDIENTS
    • Broccoli florets – 7 oz, trimmed
    • 1 chicken breast, skinless, deboned, diced
    • Ginger – 1 tbsp, minced
    • Garlic – 2 cloves, minced
    • 1 red onion, thinly sliced
    • 1 roasted red pepper, cut into cubes
    • Extra virgin olive oil - 2 tsps
    • Chili powder (mild) – 1 tsp
    • Soy sauce – 1 tbsp, reduced salt, if available
    • Honey – 1 tbsp
    • Cooked brown rice – 1 pack
INSTRUCTIONS
    • In a medium pan, bring water to boil. Tip broccoli into boiling water and boil for 4 minutes. Drain, but reserve the water.
    • In a non-stick wok, heat olive oil and stir-fry the ingredients for 2 minutes per batch in the given order: ginger, garlic, onions; chili powder; chicken; broccoli, soy sauce, honey, red pepper and 4 tbsps broccoli boiling water.
    • Heat the rice according to the directions on the pack; serve with the chicken stir-fry.
