INGREDIENTS
Servings: 4
Persian cucumbers
5
Salt
½ to 1 tsp.
Minced garlic
2 cloves
Sesame oil
1 tsp.
Granulated sugar
½ tsp.
Red pepper flakes
1 tsp.
DIRECTIONS
  1. Trim the ends of the cucumbers, cut into several chunks crosswise.  Smack them with a heavy knife until they are smashed, then divide into bite-sized pieces with your hands (1 inch long and ½ inch thick).
  2. Place smashed cucumbers into a large bowl. Add all the other ingredients and mix until the cucumbers are evenly coated in all the seasonings and oil. Taste one chunk and see if you need to adjust salt, oil, or any other seasoning.
  3. Refrigerate for an hour or more to let the cucumber marinate well or enjoy immediately – they are already delicious!
