Classic Bubble and Squeak Patties

INGREDIENTS
Servings: 4
Potatoes
1 lb., peeled, cut into chunks
Cabbage
2 cups, shredded
1 carrot, grated
1 onion, minced
Prepared yellow mustard
1 tsp.
Shredded sharp Cheddar cheese
½ cup
Salt
to taste
Pepper
to taste
DIRECTIONS
  1. Put the sliced potatoes in a saucepan and add enough water for it to cover the potatoes.
  2. Bring potatoes to a boil and simmer them over a medium heat until they become tender enough and can be easily pierced with a fork, or for about 10 min.
  3. Drain potatoes, mash them, and set aside.
  4. Meanwhile, use another saucepan to combine cabbage and carrot. Add just enough water to cover the bottom of the pan.
  5. Cook over a medium heat for about 5 min, or until the mixture is tender.
  6. Drain off liquid, add mashed potatoes, and stir the mixture.
  7. Add onion, mustard, and shredded Cheddar cheese. Season the mixture with salt and pepper.
  8. Make four patties of the mixture.
  9. Grease a grill pan and heat it over a medium-high heat. Put the patties on the pan and grill until golden brown, or for about 5 min on each side. Serve while hot.
