INGREDIENTS
Servings: 6
Garlic
2 cloves, crushed
Green onions, whites and greens chopped separately

Canola oil

Whole chicken breast, cooked, shredded

Salt
to taste
Pepper
to taste
Salsa
1 cup
Tortilla chips
½ 12-oz package
Cheddar cheese
4-oz piece
Monterey Jack cheese
4-oz piece
½ large tomato, diced
DIRECTIONS
  1. Pre-heat oven to 350°F/180°C/Gas Mark 4.
  2. Shred both kinds of cheese and mix them into a blend.
  3. Preheat canola oil in a 12-in skillet over medium heat; add garlic and onion whites, cook until tender.
  4. Mix in shredded chicken, season with salt and pepper. Toss to coat in oil. Add salsa, stir well.
  5. Arrange tortilla chips in a single layer on a rimmed baking sheet. Spread the chicken mixture over the chips. Sprinkle generously with the cheese blend and diced tomato.
  6. Bake until the cheese has melted (about 10 minutes). Sprinkle with the onion greens and serve.
