Creamy Spinach Tortellini

INGREDIENTS
Servings: 6
Cheese tortellini
1 lb.
Unsalted butter
1 tbsp.
Garlic
1 clove, minced
All-purpose flour
2 tbsp.
Heavy cream
1 ¼ cups
Salt
½ tsp.
Parmesan cheese
1/3 cup, grated
Baby spinach
5 oz., sliced thinly
Sun-dried tomatoes
1 (7 oz.) jar, sliced thinly
DIRECTIONS
  1. Cook pasta according to the package instructions.
  2. While pasta is cooking, make the sauce. Add butter to a large skillet and melt it over a medium heat.
  3. Add garlic and cook, stirring, for about 1 minute or until fragrant.
  4. Add flour and stir well until it absorbs the butter and turns into a paste.
  5. Add the heavy cream slowly, whisk until the mixture is smooth and thin enough.
  6. Season with salt and add cheese. Let it simmer for bout 5 minutes, or until the dish thickens.
  7.  Add spinach and tomatoes and stir.
  8. Transfer the ready pasta to the skillet and gently stir the tortellini with the sauce. Serve immediately.
