Re-invent family dinners with Deep Dish Veggetable Pizza!
INGREDIENTS

Store-bought crust
1
Pizza sauce
½ cup
Extra virgin olive oil
2 tbsps
Garlic
1 clove
Seasonal vegetables
1 cup (tomatoes, bell peppers, eggplants, onions, mushrooms, etc.)
Italian seasoning
1 tsp
Mozzarella cheese
½ cup, grated
Fresh parsley
2 tbsps, chopped (optional)
DIRECTIONS
- Pre-heat oven to 400°F/200°C/Gas Mark 6.
- Line a rimmed baking sheet with paper parchment; place the vegetables in one layer, sprinkle with olive oil, toss to coat. Bake for 6 minutes, tossing once. Set aside.
- Increase the oven temperature to 450°F/230°C/Gas Mark 8.
- Coat a round baking dish with olive oil and rub with a garlic clove. Push the dough around the sides to make a 1-1.5-inch high edge. Let the dough rest while you are preparing toppings.
- Sprinkle the dough with ½ grated mozzarella, spread veggies in one even layer, cover with sauce, sprinkle with Italian seasoning, top with the remaining mozzarella.
- Bake for about 30 minutes (the crust should become golden and the filling bubbly).
- Remove from oven, let rest for 5 minutes, sprinkle with parsley, if desired, cut and serve immediately.
