Store-bought crust 
Pizza sauce
½ cup
Extra virgin olive oil
2 tbsps
1 clove
Seasonal vegetables
1 cup (tomatoes, bell peppers, eggplants, onions, mushrooms, etc.)
Italian seasoning
1 tsp
Mozzarella cheese
½ cup, grated
Fresh parsley
2 tbsps, chopped (optional)
  1. Pre-heat oven to 400°F/200°C/Gas Mark 6.
  2. Line a rimmed baking sheet with paper parchment; place the vegetables in one layer, sprinkle with olive oil, toss to coat. Bake for 6 minutes, tossing once. Set aside.
  3. Increase the oven temperature to 450°F/230°C/Gas Mark 8.
  4. Coat a round baking dish with olive oil and rub with a garlic clove. Push the dough around the sides to make a 1-1.5-inch high edge. Let the dough rest while you are preparing toppings.
  5. Sprinkle the dough with ½ grated mozzarella, spread veggies in one even layer, cover with sauce, sprinkle with Italian seasoning, top with the remaining mozzarella.
  6. Bake for about 30 minutes (the crust should become golden and the filling bubbly).
  7. Remove from oven, let rest for 5 minutes, sprinkle with parsley, if desired, cut and serve immediately.
