INGREDIENTS
Servings: 8
Unsalted butter
½ cup, at a room temperature
Canola oil
¼ cup (can be replaced with coconut oil)
Sugar
¾ cup
Eggs
3, large
Vanilla extract
1 tsp.
All-purpose flour
1 ¾ to 2 cups, unbleached
Baking powder
2 tsp.
Salt
¼ tsp.
Nutella
½ - ¼ cup, at a room temperature
DIRECTIONS
  1. Heat the oven to 425° F/220° C/Gas Mark 7.
  2. Add the first five ingredients (from butter to vanilla) to a medium bowl and beat with an electric mixer.
  3. Combine all the dry ingredients (from flour to salt) and stir them into the first mixture.
  4. Grease muffin tins or line them with paper. Spoon the mixture into the tins.
  5. Top each muffin with 1 tbsp. Nutella and mix well with a toothpick.
  6. Bake for 5 minutes, then reduce the heat to 350° F/175° C/Gas Mark 4 and bake for 15 to 20 more minutes or until a toothpick inserted in the center comes out clean.
  7. The amount of the batter is enough for baking 8 large muffins or 12 regular ones.
