INGREDIENTS
Servings: 4
Milk, room temperature 
2/3 cup 
Packed all-purpose flour 
1/2 cup 
Large eggs, room temperature 
Vanilla extract 
1/4 tsp 
Salt 
1/4 tsp 
Clarified butter 
3 tbsps
Butter 
1 tbsps
Meyer lemon, juiced 
1/2 
Confectioners' sugar, or to taste 
1 tbsps
DIRECTIONS
  1. Preheat the oven to 425° F. 
  2. Mix milk, flour, eggs, vanilla extract, and salt  in a blender until the mixture is smooth. 
  3. In a cast-iron skillet, melt the butter over high heat until bubbling. Pour the milk mixture into the skillet's center. 
  4. Bake for 20-25 minutes until it's puffed and golden. Brush it with 1 tbsp butter. Drizzle with lemon juice. After that, dust with confectioners' sugar.
