INGREDIENTS

Olive oil spray
to spray the baking sheet
Egg whites
2
Panko breadcrumbs
1 ½ cups (can by replaced by breadcrumbs)
Cumin
½ tsp.
Flaked coconut
¾ cup
Garlic clove
1, minced
Pepper
to taste
Large shrimp
24, peeled, deveined
DIRECTIONS
- Heat the oven to 500° F/260° C/Gas Mark 10.
- Spray the baking sheet with the olive oil spray.
- Add egg whites to a bowl and beat them well.
- Prepare a plastic bag, add the next five ingredients to it (from breadcrumbs to pepper), and mix well.
- Dip shrimp in egg whites and shake in a plastic bag to coat well.
- Place shrimp on the baking sheet and bake it for 6 minutes per side or until golden brown.
