Carrot Rice Recipe: Basmati rice, ginger, and peanuts - what can be healthier, tastier, and easier to prepare?!
INGREDIENTS

Basmati rice
1 cup
Onion, sliced
1
Minced fresh ginger root
1 tsp
Grated carrots
3/4 cup
Water
2 cups
Roasted peanuts
1/4 cup
Margarine
1 tbsp
Fresh cilantro, chopped
to taste
Salt
to taste
Cayenne pepper
to taste
DIRECTIONS
- In a saucepan, combine rice and water. Bring water to a boil over high heat. Reduce heat to low. Cover and continue cooking for about 20 min, or until the rice is tender.
- Meanwhile, grind peanuts in a blender. Set aside.
- In a skillet over medium, heat margarine. Add onion. Cook for about 10 minutes (until the onion softens and becomes golden brown). Add ginger root, carrots, and salt.
- Reduce to low. Steam for 5 minutes, covered. Add cayenne and nuts. Add the cooked rice to skillet. Stir to combine. Garnish with cilantro. Serve and enjoy your carrot rice!
