INGREDIENTS
Servings: 6
Basmati rice
1 cup
Onion, sliced
1
Minced fresh ginger root
1 tsp
Grated carrots
3/4 cup
Water
2 cups
Roasted peanuts
1/4 cup
Margarine
1 tbsp
Fresh cilantro, chopped
to taste
Salt
to taste
Cayenne pepper
to taste
DIRECTIONS
  1. In a saucepan, combine rice and water. Bring water to a boil over high heat. Reduce heat to low. Cover and continue cooking for about 20 min, or until the rice is tender.
  2. Meanwhile, grind peanuts in a blender. Set aside.
  3. In a skillet over medium, heat margarine. Add onion. Cook for about 10 minutes (until the onion softens and becomes golden brown). Add ginger root, carrots, and salt.
  4. Reduce to low. Steam for 5 minutes, covered. Add cayenne and nuts. Add the cooked rice to skillet. Stir to combine. Garnish with cilantro. Serve and enjoy your carrot rice!
