Keto Butter Chicken Recipe: Serve this yummy chicken with rice!
INGREDIENTS

Sour cream

Garlic

Boneless skinless chicken thighs
1 1/2 lb, cut into small pieces
For the sauce:
Ghee (clarified butter)
2 tbsp, divided
Yellow onion
1, minced
Fresh ginger
1 tbsp, minced
Garlic
2 cloves, minced
Tomato paste
1 tbsp
Water
1 1/2 cups
Garam masala
2 tsp
Ground fenugreek
1/2 tsp (optional)
Heavy cream
1 cup
Cilantro leaves
for serving
DIRECTIONS
- Whisk sour cream, minced garlic, lemon juice, garam masala, minced ginger, cumin, chili powder, and salt (1 tsp) in a bowl. Add chicken. Toss to coat. Cover the bowl with plastic wrap. Refrigerate for 30 minutes.
- Heat clarified butter (1 tbsp) in a skillet over medium. Cook chicken for 5 minutes, or until golden. Next, transfer to a plate.
- To make the sauce: add clarified butter (1 tbsp) to the skillet. Add onion and cook for 5 minutes, or until softened. Add 1 tbsp ginger and 2 cloves garlic. Cook for 1 minute.
- Next, add tomato paste, water, garam masala (2 tsp), and fenugreek (if using). Transfer the chicken back to the skillet. Bring to a simmer.
- Add heavy cream. Keep cooking for about 7 minutes, or until tender. Before serving, garnish with cilantro leaves if desired. Enjoy your Keto Butter Chicken!
