An easy to make Mexican slaw that pairs well with anything!
INGREDIENTS
Servings: 4
Soy sauce
2 tbsps
Lime juice
2 limes
Toasted sesame oil
1 tbsp
Sugar
1 tbsp
Arbol chili pepper
1 dried (can be replaced with any small spicy red chili pepper), seeded, cut into rings
Kosher salt
1 tsp
Fresh ground black pepper
1 tsp
Jicama
1, small, peeled, shredded (about 2 cups)
Beets
3, medium, raw, peeled, shredded
Cucumber
1, big, peeled, thinly sliced
DIRECTIONS
- In a medium bowl, combine all the ingredients from the soy sauce to th pepper.
- In a large bowl, combine shredded jicama with beets and sliced cucumber; toss with the dressing. Refrigerate before serving.
