Easy pasta salad for a cookout or a potluck dinner
INGREDIENTS
Servings: 12
Seashell pasta
1 lb
Genoa salami
¼ lb, chopped
Pepperoni sausage
¼ lb, chopped
Asiago cheese
½ lb, diced
Black olives -1 can, drained, chopped
2 bell peppers, different colors, chopped
3 tomatoes, chopped
Dry Italian-style salad dressing mix - 1 0.7-oz package
Extra virgin olive oil
¾ cup
Balsamic vinegar
¼ cup
Dried oregano
2 tbsp.
Dried parsley
1 tbsp.
Parmesan cheese
1 tbsp., grated
Salt- to taste
Black pepper
to taste
DIRECTIONS
- Follow directions on the package to cook pasta. Drain, rinse with cold water, set aside.
- In a salad bowl, combine all the ingredients from pasta to dry seasoning. Mix well, cover, chill for 1 hour.
- Right before serving, whisk together the remaining ingredients to prepare the dressing. Add dressing to the salad, mix well and serve.
