INGREDIENTS

Cherry tomatoes
1 (10 oz.) basket, halved
Olive oil
1 tbsp.
Garlic
1 tsp., minced
Salt
to taste
Ground black pepper
to taste
Angel hair pasta
4 oz.
Basil leaves
3, cut into strips
Red pepper flakes
1 dash
Parmesan cheese
2 tbsp., fresh grated (optional)
DIRECTIONS
- Heat the oven to 375° F/190° C/Gas Mark 5.
- Combine the first five ingredients in a bowl and stir until well-mixed.
- Spread the mixture on a baking sheet with shallow sides.
- Bake for 25 to 30 minutes or until the tomatoes are soft and wrinkled.
- Add water to a large pot, season it with salt, and bring to a boil.
- Add angel pasta and cook for 4 to 5 minutes stirring occasionally. Drain reserving a bit of cooking water.
- Prepare a small saucepan and place tomatoes with juices in it. Add basil leaves and red pepper flakes.
- Pour in the pasta cooking water until the tomato mixture is of the desired consistency.
- Cook over a low heat, stirring, for 5 minutes or until warm. Add pasta, stir again, and top with cheese.
