INGREDIENTS
Servings: 2
Cherry tomatoes
1 (10 oz.) basket, halved
Olive oil
1 tbsp.
Garlic
1 tsp., minced
Salt
to taste
Ground black pepper
to taste
Angel hair pasta
4 oz.
Basil leaves
3, cut into strips
Red pepper flakes
1 dash
Parmesan cheese
2 tbsp., fresh grated (optional)
DIRECTIONS
  1. Heat the oven to 375° F/190° C/Gas Mark 5.
  2. Combine the first five ingredients in a bowl and stir until well-mixed.
  3. Spread the mixture on a baking sheet with shallow sides.
  4. Bake for 25 to 30 minutes or until the tomatoes are soft and wrinkled.
  5. Add water to a large pot, season it with salt, and bring to a boil.
  6. Add angel pasta and cook for 4 to 5 minutes stirring occasionally. Drain reserving a bit of cooking water.
  7. Prepare a small saucepan and place tomatoes with juices in it. Add basil leaves and red pepper flakes.
  8. Pour in the pasta cooking water until the tomato mixture is of the desired consistency.
  9. Cook over a low heat, stirring, for 5 minutes or until warm. Add pasta, stir again, and top with cheese.
