INGREDIENTS

Olive oil
1 tbsp
Medium onion
½ , fine chopped
Garlic
2 cloves, minced
Ancho (or any other) chili powder
1 tsp
Pinto beans
1 can (15 oz), low-sodium, if available; drained and rinsed
Reduced-sodium chicken broth
2/3 cups + more
Kosher salt
to taste
Fresh ground black pepper
to taste
Fresh cilantro
2 tbsp.
DIRECTIONS
- In a large skillet, preheat the olive oil over medium heat. Add the chopped onion; cook until soft (about 3 minutes). Add garlic, stir well; cook for another minute.
- Add the beans and the broth; cook for about 5 minutes to warm the beans well through.
- Mash the beans toughly with the back of a spoon; add more broth for a moister texture.
- Season with salt and pepper to taste; stir in chopped cilantro and serve.
