INGREDIENTS
Servings: 4
Spaghetti 
12 oz
Butter 
2 tbsp
Scallops
1/2 lb, patted dry
Shrimp
1/2 lb, peeled, deveined
Kosher salt 
to taste
Ground black pepper 
to taste
Shallot
1, minced 
Garlic
3 cloves, minced
Low-sodium vegetable broth 
3/4 cup
Milk 
3/4 cup
Parmesan cheese
1/2 cup, grated (+ more for garnish)
Tomatoes 
1 cup, chopped
Parsley 
1/4 cup, chopped (+ more for garnish)
Lemon juice 
1/2 lemon
DIRECTIONS
  1. Pour water into a large pot. Add salt. Bring to a boil. Add spaghetti and cook according to the package directions until al dente. Drain. Return the spaghetti to the pot. 
  2. Melt butter in a skillet over medium. Add shrimp and scallops. Season with salt and ground black pepper to taste. Cook for 2 minutes on each side. Transfer the shrimp and scallops to a plate. Set aside. 
  3. Add minced shallot and garlic. Cook for 3 minutes, or until fragrant. Add vegetable broth, milk, cheese, chopped tomatoes, and parsley. Season with salt. Cook for 3 minutes. Add shrimp and scallops. Toss to combine. Add lemon juice. Add spaghetti. Toss to coat. Garnish with parsley and cheese. Serve and enjoy your simple Shrimp Pasta!
