INGREDIENTS

Eggs

Water
1/3 cup
Hot red pepper sauce
1 cup
Self-rising flour
2 cups
Pepper
1 tsp.
Salt
1 cup (for House Seasoning, not to be used entire for this recipe)
Black pepper
¼ cup (for House Seasoning, not to be used entire for this recipe)
Garlic powder
½ cup (for House Seasoning, not to be used entire for this recipe)
Chicken
1 (1 to 2 ½ lbs.), cut into pieces
Oil
for frying (preferably peanut oil)
DIRECTIONS
- Add eggs and water to a medium bowl and beat them well. Add hot red pepper sauce until the egg mixture is bright orange.
- Mix flour and pepper in another bowl.
- Combine salt, black pepper, and garlic powder and season the chicken with the mixture.
- Dip the chicken in the egg mixture and then coat it with the flour mixture.
- Add oil to a deep pot and heat it to 350° C. Make sure the pot is only half full with oil.
- Fry chicken in the hot oil until it’s crisp and brown. Fry dark meat for about 13 to 14 minutes and white meat for 8 to 10 minutes.
