INGREDIENTS

Water
1/3 cup
Hot red pepper sauce
1 cup
Self-rising flour
2 cups
Pepper
1 tsp.
Salt
1 cup (for House Seasoning, not to be used entire for this recipe)
Black pepper
¼ cup (for House Seasoning, not to be used entire for this recipe)
Garlic powder
½ cup (for House Seasoning, not to be used entire for this recipe)
Chicken
1 (1 to 2 ½ lbs.), cut into pieces
Oil
for frying (preferably peanut oil)
DIRECTIONS
  1. Add eggs and water to a medium bowl and beat them well. Add hot red pepper sauce until the egg mixture is bright orange.
  2. Mix flour and pepper in another bowl.
  3. Combine salt, black pepper, and garlic powder and season the chicken with the mixture.
  4. Dip the chicken in the egg mixture and then coat it with the flour mixture.
  5. Add oil to a deep pot and heat it to 350° C. Make sure the pot is only half full with oil.
  6. Fry chicken in the hot oil until it’s crisp and brown. Fry dark meat for about 13 to 14 minutes and white meat for 8 to 10 minutes.
