A cool idea for a hot day! Use peanuts or replace them with almonds, granola, or cashew.
INGREDIENTS
Servings: 8
4 bananas, peeled, halved horizontally
Peanut butter
1/3 cup
Semisweet baking chocolate
1 (8 oz.) package
Peanuts
½ cups, roasted, chopped
8 ice pop sticks
DIRECTIONS
- Prepare pop sticks and insert them in the cut ends of all banana halves.
- Cover a baking sheet with wax paper, place banana halves on it, and freeze for about 2 hours or until the bananas are frozen through.
- When bananas are ready, cover each of them with a layer of peanut butter and place bananas back in the freezer again for 30 to 45 minutes.
- Prepare a double boiler melt chocolate in it over barely simmering water. Stir frequently and scrape down the sides of the boiler with a rubber spatula.
- Dip each banana in the chocolate and then spoon the chocolate over each banana to cover it completely.
