INGREDIENTS
Servings: 8
4 bananas, peeled, halved horizontally
Peanut butter
1/3 cup
Semisweet baking chocolate
1 (8 oz.) package
Peanuts
½ cups, roasted, chopped
8 ice pop sticks
DIRECTIONS
  1. Prepare pop sticks and insert them in the cut ends of all banana halves.
  2. Cover a baking sheet with wax paper, place banana halves on it, and freeze for about 2 hours or until the bananas are frozen through.
  3. When bananas are ready, cover each of them with a layer of peanut butter and place bananas back in the freezer again for 30 to 45 minutes.
  4. Prepare a double boiler melt chocolate in it over barely simmering water. Stir frequently and scrape down the sides of the boiler with a rubber spatula.
  5. Dip each banana in the chocolate and then spoon the chocolate over each banana to cover it completely.
  6. Roll the bananas in the chopped peanuts and put them on the baking sheet covered with wax paper.
  7. Freeze until chocolate becomes firm, or for 1 to 2 hours.
