This hearty and easy-to-make egg drop soup will taste even better than the restaurant version!

INGREDIENTS
Servings: 4
Chicken broth, divided 
4 cups
Ground ginger 
1/8 tsp
Cornstarch 
1 1/2 tbsps
Eggs 
2
Egg yolk 
1
Chopped fresh chives 
2 tbsps
Salt 
1/4 tsp
DIRECTIONS
  1. Pour chicken broth into a saucepan, reserving 3/4 cup. Add salt, ginger root, and fresh chives. Bring to a boil.
  2. Mix the remaining chicken broth and cornstarch until smooth in a small bowl. Set the mixture aside.
  3. Using a fork, mix eggs and egg yolk in a small bowl. Drizzle the mixture from the fork into the broth a little at a time. Gradually, stir in the cornstarch mixture until your healthy Egg Drop Soup reaches the desired consistency. Serve. Enjoy!
