INGREDIENTS
Servings: 12
Ham
2 cups, finely diced
Cheese
1 1/3 cups, finely grated
Bell pepper
1, seeded, stem cut away, finely diced
Green onions
3-4, sliced thinly (optional)
Baking cups

Eggs
15, well-beaten
Spike seasoning
½ tsp. (can be replaced with another seasoning)
DIRECTIONS
  1. Heat the oven to 375° F/190° C/Gas Mark 5.
  2. Prepare silicone baking cups and spray them with nonstick spray.
  3. Divide ham, cheese, bell pepper, and green onions evenly among the cups in layers/ Start with ham, then add a layer of bell pepper, then a layer of onions, and finish with a layer of cheese.
  4. Break eggs into a medium-sized bowl, add Spike seasoning, and beat them with a fork.
  5. Pour the egg mixture over the muffin cups until they’re almost full. Make sure the mixture doesn’t reach the top, though.
  6. Gently stir the mixture with a fork and put the cups into the oven.
  7. Bake for 25 to 30 minutes or until the mixture is set and slightly brown.
