INGREDIENTS

Lemon Bars Crust:
Nonstick cooking spray
All-purpose flour
1 3/4 cup
Confectioners' sugar
1/4 cup
Cornstarch
1/4 cup
Salt
1/2 tsp
Cold unsalted butter
1 cup, cut into pieces
Lemon Bars Filling:
Eggs
4
Egg yolks
4
Sugar
1 3/4 cup
All-purpose flour
1/3 cup
Salt
1/4 tsp
Lemon juice
1 cup
Lemon zest
1 tsp, grated
Cold unsalted butter
8 tbsp, cut into pieces
Confectioners sugar
1 tbsp
DIRECTIONS
- Preheat the oven to 350° F (180° C/Gas mark 4).
- Prepare a 9x13-inch baking pan: line it with foil, leaving an overhang. Spray with cooking spray.
- To make the crust, combine flour, confectioners sugar, cornstarch, and salt in a food processor. Pulse until combined. Add butter. Pulse until looks like coarse sand. Transfer to the pan. Pat down.
- Bake in the preheated oven, rotating halfway through, for 20 minutes, or until golden around the edges.
- To make the filling, whisk sugar, eggs, egg yolks, and juice in a saucepan over medium heat for 5 minutes, or until thickened. Remove from heat. Whisk in lemon zest and butter.
- Next, lower the oven temperature to 300° F (150° C).
- Pour the filling over the crust.
- Bake in the oven for 13 minutes, or until set. Then, allow to cool to room temperature on a wire rack. Next, refrigerate for 2 hours.
- Remove from the pan and slice. Dust with confectioners' sugar. Serve and enjoy your Lemon Bars!
