INGREDIENTS
Servings: 10
Fava beans
2 cups, dried, split
1 red onion, cut into quarters
Parsley
½ cup, fresh
Cilantro
½ cup, fresh
Dill
½ cup, fresh
Garlic
3 cloves
Coriander
1 ½ tsp., ground
Salt
1 ½ tsp.
Cumin
1 tsp., ground
Sesame seeds
1 cup (optional)
Vegetable oil
for frying
DIRECTIONS
  1. Prepare a large bowl and put fava beans in it.
  2. Add water so that it covers the beans and let them soak for 8 hours to overnight.
  3. Add the first nine ingredients (from soaked fava beans to cumin) to a food processor and pulse until the mixture consistency reminds of dough.
  4. Cook sesame seeds in a skillet over a medium-high heat for about 5 minutes, stirring occasionally. Transfer the seeds to a large plate.
  5. Shape the dough-like mixture into balls and roll them in sesame seeds to coat.
  6. Prepare a large saucepan, fill it ¼ full with oil, and heat it over a medium heat.
  7. Fry for 3 to 5 minutes or until golden brown and then drain using paper towels.
