INGREDIENTS

Vegetable oil
1 cup
Eggs

1 tbsp
Flour
3 cups
Salt
1 tsp
Baking soda
1 tsp
Cinnamon
1 tsp
Feijoa flesh
3 cups (about 20 small feijoas)
Brown sugar
½ cup
DIRECTIONS
  1. While preheating oven to 350° F/175° C/Gas Mark 4, put muffin liners into muffin trays.
  2. Take out the flesh out of overripe feijoas and mash it with a fork. Put aside.
  3. Cream oil and white sugar in a mixer until smooth. Pour the mixture into a bowl and add eggs and oil. Whisk well. Combine with flour, salt, baking soda, and cinnamon. Add feijoa and mix. Fill the muffin liners with the mixture to ¾ full. Sprinkle the tops of the muffins with brown sugar.
  4. Bake in the oven for 18 – 23 minutes until golden brown. You can check whether the muffins are ready with a toothpick. If it comes out clean, remove the muffins from the oven.
