INGREDIENTS
Servings: 12
Graham cracker crumbs
1 ½ cups, finely crushed
White sugar
¼ cup
Unsweetened cocoa powder
2 tbsp.
Butter
6 tbsp., melted
Cream cheese
1 cup, of room temperature
Mascarpone cheese
1 cup, of room temperature
Lemon zest
2 tsp., grated
Lemon juice
2 tsp.
Vanilla extract
1 tsp.
White sugar
1/3 cup
Cold heavy whipping cream
1 ¼ cups
Fresh strawberries
20, large, hulled, cut in half lengthwise
Fresh blueberries
24, large, or as needed
DIRECTIONS
  1. Combine the first four ingredients (from cracker crumbs to butter) in a bowl and stir until crumbly and thoroughly combined.
  2. Prepare a 9x11 baking dish and put the crust mixture in it. Press until smooth and even. Cover with a plastic wrap and keep in the fridge for about 30 minutes or until set.
  3. Combine the cheeses in a bowl and stir well. Add the next three ingredients (from lemon zest to vanilla extract) to the mixture and stir well.
  4. In a separate metal, whisk the rest of sugar into the heavy whipping cream until the cream is fluffy and start forming soft peaks.
  5. Add the whipped cream to the cream cheese mixture and whisk carefully until the filling is fluffy and soft.
  6. With a spoon, place the filling on the crust. Spread and smooth the top. To help the crust and filling settle, tap the pan gently on a work surface.
  7. Cover the pan with a plastic wrap tightly and keep in the fridge for 3 hours or more.
  8. Arrange the strawberries in a horizontal line starting at the bottom long edge of the cake. Make sure the pointed bottoms of the strawberry halves pointing to the right.
  9. Arrange the next line of strawberries starting it at the top right of the cake. Make sure the bottoms point right and the line stretches to about 2/3 length of the cake.
  10. Continue with the rest of the strawberries, starting about ¾ inch up from the bottom stripe.
  11. Make blueberry lines filling the empty square so that the pattern looks like the American flag.
