INGREDIENTS
Servings: 8
Coleslaw mix
1 (16-oz.) package
Meat, poultry, or shrimp
1 cup, finely chopped
Fresh ginger
1-1 ½ tbsp., minced
Garlic cloves
2, pressed
Seasoned pepper
1 tsp.
Salt
½ tsp.
Egg roll wrappers
1 (16-oz.) package
Vegetable oil
as needed
DIRECTIONS
  1. Heat the oven to 375° F/190° C/Gas Mark 5.
  2. Combine the first six ingredients (from the coleslaw mix to salt) and stir well.
  3. Prepare an egg roll wrapper and brush water around its edge. Put about 1/3 cup of the prepared mixture in the center of the roll wrapper.
  4. Fold the bottom corner of the gg wrapper over the filling. Place the tip of the corner under the filling. Then fold the remaining left and right corners over the filling. Tightly roll the filled end to the last remaining corner.
  5. Prepare a deep pan or a Dutch oven and pour oil in the pan, about 3 inches deep. Fry the rolls for 3 to 4 minutes or until they’re golden brown. When ready, leave them on paper towels to drain the excess oil.
