Green Soup with Kale

INGREDIENTS
Servings: 4
Potatoes 
4 cups, peeled and cubed
Water 
3 cups
Vegetable bouillon 
1 cube
Garlic 
3 cloves, minced
Spinach or kale 
1 cup
Nutritional yeast 
1/4 cup
Cashews 
1/4 cup, soaked for 2 hours
Liquid smoke 
8 drops
Salt
to taste
Ground black pepper 
to taste 
Pumpernickel bread 
4 pieces
DIRECTIONS
  1. In a pot over high, combine cubed potatoes, water, bouillon, and minced garlic. Bring to a boil. Reduce to medium. Simmer for 10 minutes, until tender. 
  2. Meanwhile, preheat oven to 350° F (175° C/Gas mark 4). Cut pumpernickel bread into squares or into any Halloween-themed shape. Place the bread on a baking sheet. Bake in the preheated oven for 5 minutes, until crispy.
  3. Blend spinach, nutritional yeast, cashews, 1/2 cup cooking liquid, and liquid smoke until the mixture is smooth. 
  4. While the potatoes are in the pot, mash them. Stir in the green mixture until incorporated. Serve with croutons. Enjoy your  Healthy Potato Soup!
