INGREDIENTS

Caster sugar
4.5 oz
30 juniper berries , bruised
Bitter lemon
1 ¾ cups, carbonated
2 large lemons, juiced
Gin
2.5 oz
1 egg white
DIRECTIONS
- Put sugar, juniper berries and bitter lemon in a pan and simmer for 5 minutes. Remove from heat and allow to cool. Mix in lemon juice and gin and put in the fridge until cold.
- Gently beat egg white in a large jug. Sieve the lemon mixture into the jug and mix in. Put the mixture into the ice-cream maker and process according to the manufacturer’s instructions. The texture will not be as firm as usual due to gin.
- Put the sorbet into a freezer-proof container and keep in the freezer overnight.
