All-purpose flour
1 2/3 cups
Ground ginger

Baking soda

Ground cinnamon

3/4 teaspoon
Chinese five-spice powder
1/4 tsp.
White sugar

Dark molasses
1/2 cup
Vegetable oil
1/2 cup
Egg, beaten

Boiling water
1/2 cup
Powdered sugar
1 cup
Lemon juice
1/4 cup
Grated lemon zest
1 tbsp.
DIRECTIONS
- Preheat oven to 350° F/175° C/Gas Mark 4.
- Grease and dust with flour a 9-inch square baking pan.
- Mix sifted flour, cinnamon, ginger, baking soda, salt, and Chinese five-spice powder in a bowl. Stir in sugar, molasses, oil, and egg into flour mixture until just combined. Gradually pour in boiling water and whisk until the batter is smooth and shiny.
- Pour batter into the prepared baking pan. Lightly tap pan on the edges to remove any air bubbles.
- Bake in the preheated oven until a toothpick inserted into the center of the cake comes out dry, for about 35 minutes.
- Mix together powdered sugar, lemon juice, and lemon zest in a bowl until sugar dissolves.
- While the cake is still hot, evenly spoon the lemon juice mixture over it. Serve cool.
