All-purpose flour
1 2/3 cups
Ground ginger
2 tsp.
Baking soda
1 1/4 tsp.
Ground cinnamon
1 teaspoon
3/4 teaspoon
Chinese five-spice powder
1/4 tsp.
White sugar
 1/2 cup
Dark molasses
 1/2 cup
Vegetable oil
1/2 cup
Egg, beaten
Boiling water
1/2 cup
Powdered sugar
1 cup
Lemon juice
1/4 cup
Grated lemon zest
1 tbsp.
  1. Preheat oven to 350° F/175° C/Gas Mark 4.
  2. Grease and dust with flour a 9-inch square baking pan.
  3. Mix sifted flour, cinnamon, ginger, baking soda, salt, and Chinese five-spice powder in a bowl. Stir in sugar, molasses, oil, and egg into flour mixture until just combined. Gradually pour in boiling water and whisk until the batter is smooth and shiny.
  4. Pour batter into the prepared baking pan. Lightly tap pan on the edges to remove any air bubbles.
  5. Bake in the preheated oven until a toothpick inserted into the center of the cake comes out dry, for about 35 minutes.
  6. Mix together powdered sugar, lemon juice, and lemon zest in a bowl until sugar dissolves.
  7. While the cake is still hot, evenly spoon the lemon juice mixture over it. Serve cool.
