INGREDIENTS

Onion
¾ cup, chopped
Garlic cloves
2, minced
Olive oil
1 tbsp.
Tomato sauce
1 (46 oz.) jar
Lean ground turkey
1 lb.
Ricotta cheese
16 oz., part-skim
Fat-free mozzarella cheese
12 oz., shredded
Parmesan cheese
¼ cup, grated
Eggs

Lasagna noodle
1 lb., cooked
DIRECTIONS
  1. Heat the oven to 350° F/175° C/Gas Mark 4.
  2. Add onion, garlic, turkey, and olive oil to a large saucepan.
  3. Add tomato sauce and simmer for 15 minutes.
  4. Combine ricotta, 1 cup mozzarella, Parmesan cheese, and eggs in a medium bowl.
  5. Take a 9x13 baking dish and add the following ingredients in layers – 2 cups sauce, half of the cooked noodles, half of the remaining sauce, all cheese mixture, half of the mozzarella, the second part of the noodles, and the sauce.
  6. Spray foil with cooking spray and bake for 45 minutes or until hot.
  7. Uncover, top with the rest of mozzarella, and bake for 15 more minutes.
  8. Add some Parmesan, let the lasagna cool down for 15 minutes, and serve.
