This healthy meatloaf recipe made with beef is easy and delicious.
INGREDIENTS

Cooking spray
Extra virgin olive oil

Green bell pepper, small chopped

Sweet onion
½ cup, diced
Garlic
½ clove, minced
Extra-lean ground beef
1 lb
Whole wheat bread crumbs
1 cup
Large eggs

Carrot
¾ cup, shredded
Zucchini
¾ cup, shredded
Salt
to taste
Fresh ground black pepper
to taste
Ketchup
¼ cup
DIRECTIONS
- Pre-heat oven to 400°F/200°C/Gas Mark 6. Apply cooking spray to a loaf pan.
- Cook bell pepper and onions in olive oil in a skillet over medium heat until softened and translucent respectively. Stir in garlic, cook until fragrant, and remove from heat.
- In a large bowl, mix the cooked vegetables with ground beef, bread crumbs, eggs, zucchini, carrot, season with salt and pepper, mix until well combined. Press into the loaf pan.
- Bake for about 40 minutes or use a cooking thermometer and make sure that the temperature in the thickest part of the loaf exceeds 160°F/70°C.
- Smear the top of the loaf with ketchup and cook for 5 more minutes.
