INGREDIENTS

Whole wheat flour
1 cup
Wheat germ
¼ cup
White sugar
1/3 cup
Ground cinnamon
1 tsp
Pumpkin spice
1 tsp
Ground nutmeg
½ tsp
Salt
½ tsp
Baking powder
1 tbsp
Milk
¾ cup
Pumpkin puree
½ cup
Melted butter
2 tbsps
Olive oil
2 tbsps
Unsweetened apple sauce
½ cup
1 egg + 1 egg white
Pecans
½ cup, chopped
DIRECTIONS
  1. Follow the manufacturer’s instructions to preheat the waffle iron. In a large bowl, mix flour with sugar, spices, salt, wheat germ, and baking powder; set aside.
  2. In another large bowl, beat milk egg and egg white, pumpkin puree, applesauce, olive oil, and butter. Add the mixture of dry ingredients, stir well. Fold in pecans.
  3. Bake ladlefuls of batter on the waffle iron until crisp and golden brown. Serve hot.
