Breakfast: Healthy Pumpkin Waffles
Whole wheat flour
Unsweetened apple sauce
1 egg + 1 egg white
½ cup, chopped
- Follow the manufacturer’s instructions to preheat the waffle iron. In a large bowl, mix flour with sugar, spices, salt, wheat germ, and baking powder; set aside.
- In another large bowl, beat milk egg and egg white, pumpkin puree, applesauce, olive oil, and butter. Add the mixture of dry ingredients, stir well. Fold in pecans.
- Bake ladlefuls of batter on the waffle iron until crisp and golden brown. Serve hot.
