INGREDIENTS
Servings: 2
Large ripe avocados
1
Tuna, drained
1 can
Light mayonnaise
2 tbsp.
Bell pepper, diced
¼
Celery, diced
½ stalk
Lemon, juiced
¼
Salt
to taste
Freshly ground black pepper
to taste
Cilantro, chopped
1 tbsp.
DIRECTIONS
  1. Slice the avocado lengthwise in half, remove the pit. Scrape some of the avocado flesh (about ½) from the inside, but leave enough on the sides (to scoop while eating).
  2. Add tuna, diced bell pepper, and celery to a bowl.
  3. Chop the scooped avocado flesh and add it to the bowl. Sprinkle with lemon juice, season with salt and pepper, mix to combine.
  4. Spoon the salad into the prepared avocado boats, sprinkle with cilantro and serve.
