A very adult salad that is healthy and fun to look at! Scoop more creamy avocado with your spoon as you go!
INGREDIENTS

Large ripe avocados
1
Tuna, drained
1 can
Light mayonnaise
2 tbsp.
Bell pepper, diced
¼
Celery, diced
½ stalk
Lemon, juiced
¼
Salt
to taste
Freshly ground black pepper
to taste
Cilantro, chopped
1 tbsp.
DIRECTIONS
- Slice the avocado lengthwise in half, remove the pit. Scrape some of the avocado flesh (about ½) from the inside, but leave enough on the sides (to scoop while eating).
- Add tuna, diced bell pepper, and celery to a bowl.
- Chop the scooped avocado flesh and add it to the bowl. Sprinkle with lemon juice, season with salt and pepper, mix to combine.
- Spoon the salad into the prepared avocado boats, sprinkle with cilantro and serve.
