Roast Salmon with Mushrooms and Truffle Oil
Roast Salmon with Mushrooms and Truffle Oil

(cooking time: 30 min; 2 servings)

  • Salmon – ½ lb, cleaned
  • Truffle oil – 2 tsps, separated
  • Sea salt – to taste
  • Fresh ground black pepper – to taste
  • Lemon juice – 2 tbsps
  • Garlic – 2 cloves, minced
  • White button mushrooms – 10 oz
  • Truffle oil – 1 tsp
  • Olive oil – 3 tbsps
  • Sea salt – to taste
  • Red pepper – to taste, crushed
  • Black pepper – to taste, crushed
  • Pea shoots – for serving
  • While preheating oven to 400°F/200°C/Gas Mark 6, rub a baking dish with butter.
  • Add mushrooms, garlic, salt, both peppers and both oils into the baking dish, toss to coat.
  • Rub salmon with salt, both peppers, lemon juice, and both oils.
  • Top mushrooms with salmon and pop in the oven.
  • Bake for up to 20 minutes or until flaky when tested with a fork.
  • Place salmon in ¼-lb slices on top of mushrooms; garnish the plates with pea shoots, sprinkle the dish with freshly ground black pepper. The dish is great with potatoes and mustard greens.
