INGREDIENTS

2 herrings, fillets separated
Sugar
1 tsp
Vegetable oil
4 tbsp
Vinegar
1 tbsp

3 hard-boiled eggs, yolks separated from whites
1 sour apple, peeled and cored
White bread
3 pieces, soaked in water or milk (squeeze out the liquid before using)
Chopped scallions
to taste
DIRECTIONS
  1. Blend the herring fillets, apple, egg whites, and bread. Mix in oil and vinegar. Crumble yolks and scallions on top of the mixture and put in the fridge.
  2. Serve on Russian black bread or crackers.
