Make your perfect cherry pie in 15 minutes only!
INGREDIENTS
Servings: 8
Tart cherries in their juice
2 cans, pitted (NOT pie filling)
Granulated sugar
1 cup
All-purpose flour
1/3 cup
Salt
1/8 tsp.
Butter
2 tbsp.
Almond extract
¼ tsp.
Egg
1 tbsp. beaten with 1 tbsp. water
Refrigerated pie crusts

DIRECTIONS
- Heat the oven to 425° F/220° C/Gas Mark 7.
- Let the pie crusts warm for about 10 minutes before unrolling.
- Drain the liquid from cherries into a measuring cup. It should make about 1 cup liquid.
- Transfer the liquid to a saucepan and add the next three ingredients 9from sugar to salt). Bring the mixture to a boil and stir frequently.
- Reduce the heat and let it simmer for about 5 minutes or until the mixture thickens.
- Turn off the heat and add butter, almond extract, and cherries to the mixture. Set the filling aside.
- Prepare a 9-inch pie plate and unroll one crust in its bottom. Fold the edges.
- Add the filling, then unroll the second crust and slice it into ½-inch wide strips.
- Arrange the strips across the pie, half vertically and half horizontally.
- Brush the pie with the egg-water mixture and bake for about 30 to 35 minutes. Cool before you serve it.
