INGREDIENTS

White sugar
3 cups
Corn syrup
¼ cup
Salt
¼ tsp.
Water
¾ cup
Vanilla extract
2 tsp.
Confectioner’s sugar
1 cup, for dusting
DIRECTIONS
- Grease a 9x13 baking dish with cooking spray.
- Add sugar, corn syrup, water, and salt to a saucepan. Heat to a temperature between 234°F and 240° 112 °C to 116°C). If you do not have a thermometer, drop a little of the heated mixture into cold water; it is ready when it forms a soft ball in the water, but flattens when put on a firm surface.
- Remove from heat when ready. Use an electric mixer to beat the mixture to soft peaks (it will take about 12 minutes). Carefully fold in vanilla extract. Pour into the baking dish.
- Refrigerate for 8 hour or overnight.
- When properly chilled, use a knife to loosen the edges, then sprinkle the top with confectioner’s sugar and flip onto a parchment-lined working surface or cutting board.
- Dust the other side confectioner’s sugar and cut into small portions.
