This authentic Irish recipe combines potatoes, bacon, and lots of butter for a creamy and comforting side dish!

INGREDIENTS
Servings: 8
Potatoes, peeled and cubed 
2 1/2 lbs
Bacon 
4 slices
Salt 
to taste
Pepper 
to taste
Butter, melted 
1/4 cup
Small head cabbage, chopped 
1/2 
Large onion, chopped 
1
Milk 
1/2 cup
DIRECTIONS
  1. Pour water in a saucepan. Add potatoes (they should be covered with water). Bring to a boil. Cook for about 15 minutes, until the potatoes are tender.
  2. Put bacon slices in a deep skillet. Cook them over medium-high heat until they turn brown. Reserving drippings, drain and crumble.
  3. In the drippings, saute chopped cabbage and onion, covered, until they turn translucent.
  4. Drain potatoes. Mash them with milk. Season with salt and pepper to taste.
  5. Fold in the cooked bacon, cabbage, and onions. Transfer to a serving bowl. Make a hole in the center. Pour in the butter. Serve. Enjoy your Colcannon With Bacon!
