INGREDIENTS
Servings: 6
Chicken thighs
3 lbs., skin-on, bone-in (about 8 pieces)
Olive oil
2 tbsp.
Dried Italian seasoning
3 tsp.
Paprika
2 tsp.
Garlic powder
2 tsp.
Onion powder
2 tsp.
Coarse Kosher salt
1 tsp. (or ½ tsp. table salt)
Pepper
½ tsp.
DIRECTIONS
  1. Heat the oven to 400° F/200° C/Gas Mark 6.
  2. Prepare a rimmed baking pan and sheet it with foil or parchment paper.
  3. Combine the dry ingredients (from dried Italian seasoning to pepper) in a small bowl and whisk them until well-combined.
  4. Pat the thighs dry with paper towels and place them in the baking pan.
  5. Rub chicken with olive oil on both sides and repeat the same procedure with the dry mixture. To make the chicken more flavorful, try to rub some of the dry mix underneath the skin.
  6. Bake for about 30 to 45 minutes without moving or turning.
  7. Cool the chicken thighs for about 5 minutes before serving.
