Nothing is more refreshing on a hot summer day than horchata!
INGREDIENTS
Servings: 8
Uncooked long-grain white rice
1 cup
White sugar
2/3 cup
Cold water
7 cups, divided
Ground cinnamon
for garnish
Raw almonds
1/4 cup
Cinnamon
1 stick
DIRECTIONS
- Place long-grain rice, nuts, cinnamon stick, and white sugar in a blender. Add 4 cups of water. Blend on HIGH speed for half a minute, until chopped up into small pieces. Add 3 cups of water. Allow it to sit at room temperature for 8 hours, occasionally stirring.
- Strain the mixture through cheesecloth. Keep in the refrigerator for 2 hours. Dust with cinnamon before serving. Enjoy your Mexican Horchata!
