INGREDIENTS

Plain dried breadcrumbs 
3/4 cup
Large egg whites 
3
Enchilada sauce 
1 (28 oz) can, divided 
Chunky salsa 
1 cup
Lean ground turkey 
1 lb
Ground chicken 
1 lb
Black beans 
1 (15 oz) can, rinsed and drained
Whole kernel corn 
  1 (15 oz) can, rinsed and drained
Fire-roasted green chiles 
1/2 (4 oz) can, diced
Dry taco seasoning mix 
1 (1 oz) package 
Cooking spray 
DIRECTIONS
  1. Preheat the oven to 400° F (200° C). Prepare a 9x13-inch baking dish using cooking spray.
  2. Mix turkey, chicken, black beans, whole kernel corn, chiles, chunky salsa, taco seasoning, bread crumbs, and egg whites in a bowl. Form the turkey mixture into a loaf. Place the loaf into the dish. Pour 1/2 of the enchilada over the loaf.
  3. Bake the meatloaf for 45 minutes.
  4. Remove the meatloaf from the oven. Pour the enchilada sauce over it. Return the loaf to the oven. 
  5. Bake for 10 minutes, until no longer pink inside. Serve and enjoy your Mexican Meatloaf!
