Plain dried breadcrumbs

Large egg whites

Enchilada sauce
1 (28 oz) can, divided
Chunky salsa
1 cup
Lean ground turkey
1 lb
Ground chicken
1 lb
Black beans
1 (15 oz) can, rinsed and drained
Whole kernel corn
1 (15 oz) can, rinsed and drained
Fire-roasted green chiles
1/2 (4 oz) can, diced
Dry taco seasoning mix
1 (1 oz) package
Cooking spray
DIRECTIONS
- Preheat the oven to 400° F (200° C). Prepare a 9x13-inch baking dish using cooking spray.
- Mix turkey, chicken, black beans, whole kernel corn, chiles, chunky salsa, taco seasoning, bread crumbs, and egg whites in a bowl. Form the turkey mixture into a loaf. Place the loaf into the dish. Pour 1/2 of the enchilada over the loaf.
- Bake the meatloaf for 45 minutes.
- Remove the meatloaf from the oven. Pour the enchilada sauce over it. Return the loaf to the oven.
- Bake for 10 minutes, until no longer pink inside. Serve and enjoy your Mexican Meatloaf!
