INGREDIENTS

Olive oil
1 tbsp.
1 onion, medium-sized, chopped
Bacon
5 strips, cut into 1-inch pieces
Garlic
1 clove, peeled, minced
Navy beans
1 (16 oz.) can, undrained
Baby spinach leaves
1 (6 oz.)
½ lemon
DIRECTIONS
- Take a saucepan, add olive oil, and heat it over a medium-high heat.
- Add onion and cook it, stirring, for about 5 minutes or until translucent.
- Add bacon and cook for 5 more minutes or until its fat starts to render.
- Add garlic, mix well, reduce the heat to medium, and cook for 5 minutes or until garlic is fragrant.
- Add navy beans, stir well, bring to a simmer, and reduce the heat to low.
- Add spinach and stir until the leaves are evenly coated.
- Cover the saucepan and simmer for about 1 hour.
- Squeeze lemon over the dish and stir well before serving.
