INGREDIENTS
Servings: 4
Eggs
4, hard-boiled, cooled, peeled
Light mayonnaise
2 tbsp.
Dijon mustard
1 tsp.
Salt
to taste
Fresh pepper
to taste
Paprika
to taste
Chives
2 tbsp., chopped
DIRECTIONS
  1. Cut the eggs in halves lengthwise, remove the egg yolks, and put them in a bowl.
  2. Add all the ingredients but chives and paprika to the egg yolks (from mayonnaise to pepper), stir well, and put the mixture back to egg whites.
  3. Top with chives and paprika.
