One of the best fish meals for a busy weeknight is for those who have no time to cook something too challenging!
INGREDIENTS
Servings: 8
Salmon
2 (14.75 oz.) cans, drained, flaked
Japanese bread crumbs
¾ cup
Fresh parsley
½ cup, minced
Eggs
2, beaten
Green onions
2, chopped
Seafood seasoning
2 tsp.
Ground black pepper
1 ½ tsp.
Garlic powder
1 ½ tsp.
Worcestershire sauce
3 tbsp.
Parmesan cheese
3 tbsp., grated
Dijon mustard
2 tbsp.
Creamy salad dressing
2 tbsp.
Olive oil
1 tbsp., divided
DIRECTIONS
- Mix all the ingredients but the olive oil (from salmon to salad dressing) in a large bowl and form 8 patties.
- Add enough oil to a large skillet and heat over a medium heat.
- Fry the patties in batches for 5 to 7 minutes per side or until browned.
- Repeat with all the patties adding enough oil to fry.
