Tastes best if served with a fresh veggie salad and French bread.
INGREDIENTS

Zucchini
3
Pork sausage
1 lb.
Garlic
1 clove, minced
Bread crumbs
1 cup, dry
Parmesan cheese
½ cup, grated
Spaghetti sauce
1 (32 oz.) jar
Mozzarella cheese
½ cup, shredded
DIRECTIONS
- Heat the oven to 350° F/175° C/Gas Mark 4.
- Trim zucchini stems and slice zucchini lengthwise.
- Remove the seeds and place them in a bowl.
- Add the next 4 ingredients (from sausage to parmesan).
- Stuff the squash with the mixture and put in a 9x13 baking dish.
- Pour the spaghetti sauce over the squash and cover the dish with aluminum foil.
- Bake for 45 minutes or until the sausage is ready.
- Remove the foil and sprinkle the dish with mozzarella. Cook until the cheese melts.
