INGREDIENTS

Olive oil
2 tbsp.
Chicken
4 oz., cooked, diced
Frozen corn
½ cup
Red bell pepper
1, sliced
Salt
to taste
Ground black pepper
to taste
Brown rice
1 cup, cooked
Salsa
½ cup
Monterey jack cheese
¼ cup, shredded
DIRECTIONS
  1. Add oil to a skillet and heat it over a medium heat.
  2. Add chicken, corn, and bell pepper slices and cook, stirring, for about 5 minutes or until the mixture is heated through and pepper is a bit softer.
  3. Season with salt and pepper.
  4. Put the rice into 2 bowls, divide the chicken mixture between them, and top it with the cheese. Serve hot.
